Aomori Prefecture Development: Innovative Production Technology of Salmon and Trout in Short Body. 青森県開発 革新的なサケ・マス類小型親魚生産技術

日本と言えば「寿司」。海外でも広く知られている。
その寿司の具材で近頃人気なのが「サーモン」。
このサーモンの需要拡大に期待される新技術が青森県で開発された。
サケ・マス類親魚から採卵するには、魚体は大きくなくてはならないという、今までの「常識」を打ち破り、従来の大きさの6分の1ほどに小型化できた。これにより、少ない床面積と水量で、効率的に飼育・採卵でき、多くの需要に応えられるようになった。
Speaking of Japan, it would be “sushi”. This fact is widely known even abroad.
“Salmon” is nowadays having popularity among sushi lovers.
A new technology was developed in Aomori Prefecture which is expected to meet the expanding demands of salmon.
It was believed that the size of salmon or trout is important to collect eggs. “This old common sense” could be broken down by this discovery. The space for breeding fish will be able to be downsized to about one sixteenth.
As the result, it is possible to efficiently breed fish and to take eggs out in a small area with less water volume, and it will be able to respond to many demands.

この技術を開発したのは、地方独立行政法人青森県産業技術センター 内水面研究所(青森県十和田市)の沢目司技能技師(57)。沢目さんがこの技術を発見したのは、6年間にわたってつけてきた飼育記録の結果。沢目さんは、12月から1月にふ化したニジマス1匹ずつを6月から翌年の12月まで、毎月の体重を記録し、約2400匹分のデーターを調べたところ、ふ化して最初に迎えた6月に一定の大きさ(約20gが目安)に育っていれば、その後の成長がよくなくても満2才で採卵できることを確認した。
沢目さんの技術開発は、日々の地道な成長記録による発見だった。十和田市生まれで、飼育業務には、30年近く携わってきた。今年、4月には、文部科学大臣表彰の創意工夫功労者賞を受賞している。
This technology was developed by Mr. Tsukasa Sawame, a skill technician (57) of Aqua Institute for Water Research, Aomori Prefecture Industrial Technology Center (Towada City, Aomori Prefecture), a local independent administrative agency. Mr. Sawame discovered this technology from the result of the breeding records that was what he has engaged for 6 years. Every month from that June to December, Mr. Sawame recorded the weight of rainbow trout which hatched from the previous December to that January. He examined the data of about 2,400 trout. He confirmed that when it is growing to a certain size (about 20 g as a guide) by June of soon after hatching, we can take eggs at the age of 2 even if the growth is not good enough by then.
The technology development of Mr. Sawame was discovered by his daily steady growth records. He was born in Towada city and has been involved in breeding operations for nearly 30 years. This April, he was awarded the creative ingenuity award of the Minister of Education, Culture, Sports, Science and Technology Awards.

研究所は、湧水の豊富な場所にあるが、それでも、飼育に使える水量には限界がある。親魚の小型化により、床面積にして64%減、飼育水量にして70%減が可能になった。また、施設内に小さな水槽を数多く設置し、他種類のサケ・マス親魚を飼育し、採卵することも可能となった。
Although the laboratory is located in plentiful places of spring water, there is still a limit to the amount of the water that can be used for breeding. By accepting a short-size fish as a parent as well, it is possible to reduce the floor area by 64% and reduce the amount of breeding water by 70%. In addition, it has been also possible to breed different types of fishes at once and to take eggs by setting up many small tanks in the facility.


7月、青森県は、研究所が開発した淡水養殖の美味な大型ニジマス「新サーモン」の地域特産品化に向け、生産・販売対策協議会の第1回会合を十和田市で開いた。成果は、着実に実を結んでいる。
In July, the first meeting of the Production and Sales Measures Council was held in Towada City, Aomori Prefecture, for the purpose of a regional special productization of delicious large rainbow trout, named “New Salmon” that was developed by the Institution.
It is steadily fruitful in its results.
